Sweet treat without breaking the scale

Craving a sweet treat but do not want all of the calories or sugar? Try making a low carb, gluten free mug cake. In less than five minutes, you can have something sweet without all of the guilt.
Chocolate Brownie Mug Cake (2 servings):
2 Tbsp butter
3 Tbsp almond flour
1 tsp coconut flour
1 1/2 Tbsp granulated sugar substitute
1/4 tsp vanilla
Pinch of salt
1 egg
1 Tbsp unsweetened cocoa powder
1/2 tsp baking powder
1 square Lindt 0% chocolate chopped
2 Tbsp pecans, chopped (optional)
Melt the butter in a small microwave safe bowl. Add the rest of the ingredients and stir. Divide batter into 2 small greased mugs. Microwave the mugs for 1 minute (may add more time if necessary). Serve with whipped cream.
Each cake has approximately 230 calories, 3 net carbs, and 6 grams of protein.
Pumpkin Pie Chocolate Chip Mug Cake (1 serving):
1 egg, beaten
1 Tbsp ground flaxseed
1 Tbsp coconut flour
2 Tbsp pure pumpkin
1 Tbsp unsweetened almond milk
Pinch of salt
1/2 tsp baking powder
1/2 tsp pumpkin pie spice
1/2 tsp vanilla liquid stevia (or other sweetener)
1 Tbsp sugar-free chocolate chips
Whisk all ingredients, except chocolate chips, until smooth. Add the chocolate chips and stir. Pour batter into coffee mug and microwave for 1 minute and 30 seconds (may add more time if necessary). Serve with whipped cream.
Each cake has approximately 146 calories, 3.5 net carbs, and 9.5 grams of protein.
